Meatless Monday - Sweet Potato And Red Pepper Soup
This is a great soup for winter, it's great tasting, warming and healthy. It's also a very easy soup to make. You can make a double batch and freeze some, it reheats very well. This recipe makes about 4 servings. It's also much prettier than it looks in this picture, sadly my colors are a tad off. Sorry about that.
Let the mixture cool down a little then transfer it to a food processer or blender and process until smooth. Add salt and pepper to taste. Return to the saucepan and reheat for a few minutes, do not return the soup to a boil.
Add the garnish. Serve with a dash of hot sauce and crusty bread.
Sweet Potato and Red Pepper Soup |
- 2 Sweet Red Peppers, seeded and cubed
- 1 1/4 pounds Sweet Potatoes, cubed
- 1 onion, roughly chopped
- 2 large Garlic Cloves, roughly chopped
- 1 1/4 cups Dry White Wine
- 5 cups Vegetable stock or broth
- Hot Sauce, to taste
- Salt and Pepper
