Meatless Monday - Sweet Potato And Red Pepper Soup

This is a great soup for winter, it's great tasting, warming and healthy.  It's also a very easy soup to make.  You can make a double batch and freeze some, it reheats very well.  This recipe makes about 4 servings.  It's also much prettier than it looks in this picture, sadly my colors are a tad off.  Sorry about that.

Sweet Potato and Red Pepper Soup
  • 2 Sweet Red Peppers, seeded and cubed
  • 1 1/4 pounds Sweet Potatoes, cubed
  • 1 onion, roughly chopped
  • 2 large Garlic Cloves, roughly chopped
  • 1 1/4 cups Dry White Wine
  • 5 cups Vegetable stock or broth
  • Hot Sauce, to taste
  • Salt and Pepper
Dice some of the red pepper and set aside for a garnish. Put the remainder into a saucepan with the sweet potato, onion, garlic, wine and vegetable stock. Bring to a boil then lower heat and simmer until all the vegetables are soft, about 30 minutes.

Let the mixture cool down a little then transfer it to a food processer or blender and process until smooth. Add salt and pepper to taste. Return to the saucepan and reheat for a few minutes, do not return the soup to a boil.

Add the garnish.  Serve with a dash of hot sauce and crusty bread.
